Pickerel en Papillote with basil

What you need

2 filets of fresh pickerel
1/2 lemon
8 fresh basil leaves
4 slices of tomato
2 tablespoons butter
1 clove of garlic
foil paper


  • Cover a baking sheet with aluminum foil
  • Place the two walleye filets on the foil and fold the back edges of the foil paper
  • Pour the lemon juice over the filets and add 2 tablespoons of butter, basil and a clove of minced garlic.
  • Place tomato slices on the filets and season with salt and pepper
  • Close the foil over the filets
  • Bake for 30 minutes at 400 degrees F
  • Serve with rice or quinoa

Serve with a dry white Sauvignon Blanc
