Salmon Canapés with Ginger Mayonnaise

What you need

1 salmon filet (1 to 2 kg)
1 ½ lime
½ cup mayonnaise
1 ½ teaspoon wasabi paste
2 teaspoons fresh ginger
1 baguette
Olive oil


  • Grate the zest of a full lime
  • cut 1/2 lime into 4 pieces, set aside
  • Press ½ lime to make juice
  • Mix lime juice, mayonnaise, wasabi and ginger together in a bowl
  • Cut the bread into slices 1 cm thick, brush one side of bread with olive oil and broil
  • Cover the salmon with mayonnaise sauce and cook on the BBQ, skin side down for about 20 minutes at an average temperature
  • Cut pieces of salmon and place on baguette slices and add more mayonnaise sauce

Serve with a dry white wine or a Champagne or Crémant de Loire
